Some of my favorites for Christmas
Peanut Butter
Roll
By Lana Cornett
Mix in a saucepan:
4 cups sugar
1 cup white syrup
3/4 cup water
Bring to a soft ball stage. Slowly pour 1/2
sugar mixture into 3 stiffly beaten egg whites while continuing to beat.
Return sugar mixture to heat and boil until it reaches hard ball stage.
Slowly pour in remaining mixture. Continue to beat by mixer or by hand until
the mixture starts to hold together and loses its shine.
Pour onto two buttered (or sprayed with cooking
spray) waxed paper. Put two more buttered sheets of waxed paper on top of
these mounds. Roll the mounds with a rolling pin making rectangles. Spread
each rectangle with peanut butter. Roll into a log. Slice.
